Buttermilk Pancakes with Chia and Banana

I love pancakes on the weekends. Especially since I don’t ever have to make them!

I thought it would be nice to switch things up a bit and asked Dino if he would add bananas and chia seeds to our go-to buttermilk pancake recipe.

At first, he looked at me like I was crazy, but I’m totally used to that.

He thought I wanted him to make an egg substitute out of the chia seeds, but I told him I just meant for him to sprinkle some in the pancakes.

The pancakes turned out great! All he did to change them up to fit my request was to pour the batter on the griddle, and before flipping, sprinkled on some chia seeds and a few banana slices. That way, when they cooked on the second side, the additional ingredients had direct contact with the hot griddle.

He also made one in the shape of Mickey Mouse for our son, with bananas for eyes and chia seeds in the ears. It was really cute, and totally his idea. Talk about bonus points!

We topped these with a little butter and real maple syrup. Delicious!

      I was surprised at how much flavor the chia seeds added. I learned this technique from watching a documentary about Kenny Shopsin– instead of mixing toppings into the pancake batter, you drop them onto the batter
      right on the griddle. Then when you flip the pancakes over, the
      toppings toast up and/or caramelize. Bananas are obviously going to
      benefit from that treatment, but the toasted chia seeds were really
      nice.

        Ooo good to know! I have a BIG bag of chia seeds that I never use but I should definitely incorporate them into breakfast more often!

          I use so many chia seeds that I started buying them in bulk from Amazon – ha! They’re sooooo good for you!
